As we begin to transition out of winter and exchange our warm, heavy clothes for lighter brighter items we may be inspired to do the same with our food. Opting for fresh salads, smoothies, and sandwiches instead of hearty soups and stews.

This carrot and apple salad is simple, light and fresh. It would be perfect to bring to a picnic or BBQ, spread on a sandwich or enjoyed as a light afternoon snack.

Carrot & Apple Salad

This carrot and apple salad is simple, light and fresh! You’ll need carrots, apples, sultanas, hummus, honey, and salt. This recipe makes 2 large or 4 small servings.

Ingredients

Salad
  • 3 Carrots
  • 2 Apples
  • 3 tbsp Sultanas
Hummus Dressing
  • 1 generous tbsp of plain hummus
  • 1 tbsp water
  • 1 tsp honey
  • 1 tsp salt

Instructions

  1. To prepare the carrots and the apples: grate them on the large holes of a box grater, or use short strokes with a julienne peeler, 
  2. Place the carrots and apples in a medium serving bowl and sprinkle in the sultanas
  3. To make the dressing, whisk all of the ingredients together in a small bowl until completely blended. You may need to add extra water depending on the brand of hummus used. 
  4. Pour the dressing over the carrot mixture and stir until the mixture is evenly coated. For best flavor, allow the salad to marinate for 10-20 minutes in the fridge before serving. 
  5. This salad will keep well in the refrigerator if covered, for about 4 days.
