satay kale crisps
Unfortunately, I have tested positive for Coronavirus and so I am self-isolating for the next 10 days, which loosely translates to lots of movies and snacks.. let’s be real. As I have been snacking constantly, I thought I better make something a little more nourishing than my typical snack choice of chocolate & salty popcorn and opted for these delicious satay kale crisps.
Inspired by a recent and kindly gifted nut butter parcel from Pip & Nut, these salty, peanut kale crisps really satisfy that crunchy craving you get when watching a movie but are packed with healthy fats, fiber vitamins, and minerals. Enjoy!
Satay Kale Chips
Ingredients
- 250g curly kale
- 3 tbsp Pip & Nut smooth peanut butter
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp water
Instructions
- Remove the kale leaves from the stalks, but don't throw the stalks away they are great blended up in a morning smoothie, rinse thoroughly and pat dry. Make sure the kale is bone dry before cooking.
- Preheat a fan oven to 150 degrees celsius, and line a large baking tray with baking paper.
- In a small bowl, combine the peanut butter, soy sauce, water and sesame oil and mix well to combine. Then add your kale to a large bowl add a bowl and coat with the satay marinade.
- Use your hands (make sure they are clean) to massage the sauce into the kale and ensure every leaf is well coated
- Transfer the kale onto the baking tray, making sure it is spread out evenly and bake for 10-15 minutes until crispy.
