tahini orzo salad
Easy orzo salad recipe with avocado, fresh herbs, and a tangy tahini dressing. Make this healthy pasta salad for your next picnic or pair it with baked white fish for dinner.
Ingredients
• 150g orzo
• 200g cherry tomatoes
• 100g black olives
• 400g cannellini beans
• 1 avocado
• 30g fresh parsley
dressing
• 2 tbsps olive oil
• 2 tbsps tahini
• 1/2 lemon
• 1 tsp salt
Method
1. Cook the orzo according to the package instructions
2. Once cooked, drain and rinse the orzo under cold water and pat dry before transferring it into a large bowl.
3. Slice the cherry tomatoes and olives in half, rinse and drain the beans, and slice the avocado into bite-sized chunks. Then add all the salad ingredients minus the parsley into the orzo and gently toss.
4. Prepare the dressing by combing all the dressing ingredients well, I like to pour mine into a glass jar pop a lid on and give it a good shake.
5. Pour the dressing over the orzo mix and then toss it together with the fresh parsley.
